The Puka Dog is Kauai's response to the standard split bun, replacing it with an uncut sweet Hawaiian roll impaled on a heated metal rod. This custom spike toasts the inside of the roll, creating a structural pocket that prevents the dense tropical sauces from turning the bread soggy. It is stuffed with garlic lemon sauce, passion fruit mustard, and a choice of tropical fruit relishes before a grilled Polish sausage is slid inside. The result is a self-contained, highly sweet-and-savory package that you must eat vertically to avoid wearing the sauce.

Method

  1. 1Mash roasted garlic and whisk with mayonnaise, fresh lemon juice, salt, and cayenne pepper to make the Garlic Lemon Secret Sauce.
  2. 2Whisk yellow mustard, whole-grain mustard, honey, and lilikoi puree to prepare the Passion Fruit Mustard.
  3. 3Prepare the tropical relish by mixing finely diced fresh mango or pineapple with minced red onion, honey, lime juice, and a splash of vinegar.
  4. 4Grill the Polish sausage on a hot flat-top until the casing is charred and blistered.
  5. 5Impale a whole, unsliced sweet Hawaiian roll vertically onto a heated one-inch metal spike to hollow and toast the interior, ensuring you do not pierce the bottom.
  6. 6Slide the warm roll off the spike and squeeze a generous portion of the Garlic Lemon Secret Sauce into the cavity.
  7. 7Spoon the sweet tropical fruit relish and the Lilikoi Passion Fruit Mustard directly into the toasted pocket.
  8. 8Guide the hot, grilled Polish sausage straight down into the sleeve, allowing it to pack the sauces tightly into the bun.

Controversies

The split between Puka Dog and Hula Dog causes consumer confusion over which brand is the authentic original.

Our take: A classic post-divorce business split. Dominique took Oahu and rebranded to Hula Dog, while Rick kept Kauai and the Puka Dog name. They use the same spiked metal rods and serve virtually the same food. Go to whichever one is closest to your beach towel.

The Hula Dog food truck on Oahu faced local boycotts due to the operator's confrontational behavior.

Our take: If you run a business trading on tropical leisure, screaming at tourists and neighbors is a poor strategy. Stick to the Kauai locations to keep your lunch free of public shouting matches.
